Today’s recipe is Roast Beef Paninis with Basil Dipping Sauce. Add a side salad or a cup of sliced apples to create a delicious lunch or light dinner. Enjoy!

 

Roast Beef Paninis with Basil Dipping Sauce

Ingredients
2 tablespoons mayo
1 tablespoon prepared horseradish
8 pieces of Oatnut bread
8 slices of reduced-fat Provolone cheese
4 slices of roast beef deli meat, sandwich thick
4 slices tomato
1 teaspoon chopped basil
1 tablespoon extra virgin olive oil

Preparation
1 cup Crema Mexicana
2 tablespoons Dijon mustard
1 tablespoon chopped basil

Mix the Crema Mexicana, Dijon mustard, and basil in a small bowl. Set aside to use as a dip for the sandwiches.

To assemble sandwiches: Stir together the mayo and horseradish. Spread onto one slice of  bread. Top with one slice of Provolone cheese. Add a slice of roast beef followed by one slice of tomato. Sprinkle basil on tomato. Add a second slice of Provolone cheese. Top with another slice of bread. Repeat for each sandwich. Brush olive oil on top of the sandwiches. Place oiled side down on a George Foreman grill. Brush oil on the flip side of each sandwich. Close lid and cook until bread is toasted and cheese is melted. About 5 minutes. Serve.
