One Delicious Healthy meal

Eating healthy can be very hard, but hopefully, I can make that a little easier with this recipe. Eating a home-cooked meal tastes ten times better than fast food, which is horrible for you. Although cooking can be challenging, I have put together this easy recipe. Hopefully, this will make eating healthy a whole lot easier for you and your family.

Air Fried Parmesan Chicken Served With Broccoli

What You Need:

  • 1/3 cup of panko
  • 1/4 cup of parmesan
  • 4 tsp of olive oil
  • 1/2 tsp of dried oregano
  • salt
  • pepper
  • 2 small boneless chicken breasts (6 ounces each)
  • 1 and 1/2 TBSP of dijon mustard
  • 2 cups of broccoli

Directions:

  1. Stir together the panko, Parmesan, 2 teaspoons of olive oil, oregano, a pinch of salt, and a couple of pinches of pepper in a small bowl.
  2. dry the chicken with some paper towels, then sprinkle lightly with salt and pepper.
  3. Brush both sides of the chicken with 1 1/2 tablespoons of the Dijon.
  4. Press the dijon-covered chicken into the panko-Parmesan mixture, making sure both sides are evenly coated.
  5. In a medium size bowl toss the broccoli with 2 tsp of olive oil, with salt and pepper to your liking, make sure all broccoli is evenly coated.
  6. Turn on your air fryer and pre-heat it to 375 degrees.
  7. Cook for 6 minutes or until brown on the top.
  8. Flip the chicken to the other side and place broccoli around the sides of the chicken.
  9. Air-fry until a thermometer inserted into the chicken is 160 degrees.

This whole meal takes about 30-45 minutes to make, plus an additional 10-minute prep time. This meal will serve two people. It is perfect for a dinner with a friend or a special someone you want to impress.
